Food Prep Friday – Omelet (or Muffin) Quiche

I love making a couple batches of these at a time in muffin tins and then freezing them. Super easy to pop in the microwave then grab and go when I am in a hurry!
  • Coconut oil
  • 16 eggs
  • 1/4 cup water
  • 1 pound chicken or sausage, cook and cut or crumbled into small pieces
  • 4 cups diced vegetables (1 red bell pepper, 1/4 lb asparagus or broccoli, and 1/2 yellow onion are my favorites, but be creative!)
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  1. Preheat the oven to 350 degrees
  2. Use a 9×13 pan or 16 muffin tins for each batch
  3. Beat the eggs in a medium bowl with salt and pepper.
  4. Layer meat and vegetables in the bottom of the pan or tins, then cover with egg mixture
  5. Bake 40 minutes for the pan or 18-20 minutes for the muffins
